Zucchini Bread

As promised, here is an amazing Zucchini Bread recipe.  Hopefully you have tons of zucchini from your own garden, or ask someone who has a garden for a few zucchini.  I'm sure they'd love to give you some.  Zucchini seems to grow in abundance - at least in CA and UT.  I went to our garden again this morning to get some and we got 4 zucchini and 6 squash.  And I went 3 days ago!  I love it!


Zucchini Bread

3 eggs, beat until foamy
1 cup oil
2 cups sugar
2 tsp vanilla
1 tsp salt
1 tsp cinnamon
1 tsp baking soda
1/2 tsp baking powder
2 cups grated zucchini
3 cups flour

Mix in order.  Bake in greased 8 x 8 pan or 2 smaller loaf pans at 325 for 1 hour.

  3. Rachel - It's more dense like a banana bread or a heavy cake rather than light and fluffy. It is very moist! Thanks for stopping by!
